Fragrant Perilla Leaf Pancakes (Kkaennipjeon): Super Simple Recipe Using Only Perilla Leaves
Made with Just Perilla Leaves! Flavorful Kkaennipjeon
You don’t need any other ingredients… Kkaennipjeon packed with the aroma of perilla leaves!!
Main Ingredients- 20 perilla leaves
Batter Seasoning- 2 cups pancake mix
- 1.5 cups water
- Pinch of salt
- Pinch of black pepper
- 2 cups pancake mix
- 1.5 cups water
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly under running water. Be sure to trim off the stems, as they can hold dirt or debris. After cleaning, gently pat them dry.
Step 2
In a bowl, combine the 2 cups of pancake mix. Add a pinch of salt and a pinch of black pepper. While pancake mix often has seasoning, a little extra salt and pepper will enhance the flavor beautifully.
Step 3
Gradually add about 1.5 cups of water to the dry ingredients, mixing until you achieve a smooth batter. The consistency should be pourable, like a thin gravy – not too thick and not too watery. When you lift a spoon, the batter should flow smoothly. Ensure there are no lumps by whisking well.
Step 4
Lay a cleaned perilla leaf flat. Using a spoon, spread a thin layer of the batter over the leaf. Then, place another perilla leaf on top, creating a two-layer sandwich. You can alternate the top and bottom sides of the leaves for even flavor.
Step 5
Gently lift the layered perilla leaf and lightly shake off any excess batter before placing it in the pan. Applying too much batter can mask the delicate flavor of the perilla leaves and make the pancakes greasy. A thin, even coating is key to a delicious kkaennipjeon!
Step 6
Heat a generous amount of cooking oil in a pan over medium-low heat. Carefully place the prepared perilla leaf sandwiches into the hot oil. Fry until golden brown and crisp on one side, then flip to cook the other side evenly. Adjust the heat as needed to prevent burning.
Step 7
Since perilla leaves are the star of this dish, you primarily need to ensure the batter is cooked through and crispy. The leaves themselves don’t require long cooking times. Focus on achieving a beautiful golden-brown color to highlight the aromatic quality of the perilla.
Step 8
Arrange the perfectly cooked perilla leaf pancakes on a serving plate. They are best enjoyed warm. For an extra flavor boost, serve with a side of soy sauce-based dipping sauce (mixed with a little vinegar) or ssamjang (spicy Korean dipping paste).
