  • 3 large eggs
  • 2 bowls cooked rice (about 400g)
  • Pinch of black pepper
  • 1/2 Tbsp salted shrimp (with brine)
  • 2 Tbsp sesame oil
  • 1 Tbsp cooking oil
  • Salt to taste (optional)

Prepare fresh scallions. Gather about a bunch (approximately 100g) that fits comfortably between your thumb and index finger. Trim them and wash thoroughly under running water, ensuring all dirt and debris are removed.

Separate the washed scallions into white and green parts and slice them. This separation allows you to utilize the distinct textures and aromas of each part effectively in your cooking.

Finely chop the green parts of the scallions. These will be mixed with the eggs. Place the chopped green scallions into a small bowl.

Crack 3 large eggs into the bowl with the green scallions. Add a pinch of black pepper and 1/2 tablespoon of salted shrimp (including some of its brine for extra umami). Whisk everything together thoroughly with chopsticks or a whisk until well combined.

Now, let’s make the aromatic scallion oil. Heat a pan over medium-low heat and add 2 tablespoons of sesame oil and 1 tablespoon of cooking oil.
