A treasured spring delicacy, coltsfoot! Introducing a fragrant seasoned coltsfoot salad that fills your mouth with the bittersweet taste of spring. This recipe reduces the bitterness and enhances the flavor, making it delicious for everyone. Brighten up your seasonal table with fragrant coltsfoot!
Main Ingredients- 3 handfuls of boiled coltsfoot (approx. 150-200g)
Seasoning Ingredients- 2 Tbsp Doenjang (fermented soybean paste)
- 1 Tbsp Gochujang (red pepper paste)
- 1 Tbsp Corn syrup or Oligosaccharide
- 1 Tbsp Garlic powder (or 1/2 Tbsp minced garlic)
- 1 Tbsp Onion powder (or 1 Tbsp minced onion)
- 2 Tbsp Perilla oil
- A pinch of sesame seeds (to taste)
- 2 Tbsp Doenjang (fermented soybean paste)
- 1 Tbsp Gochujang (red pepper paste)
- 1 Tbsp Corn syrup or Oligosaccharide
- 1 Tbsp Garlic powder (or 1/2 Tbsp minced garlic)
- 1 Tbsp Onion powder (or 1 Tbsp minced onion)
- 2 Tbsp Perilla oil
- A pinch of sesame seeds (to taste)
Cooking Instructions
Step 1
Prepare the boiled coltsfoot. To gently reduce its characteristic bitterness, soak the coltsfoot in cold water for at least 30 minutes to an hour, or even longer. Changing the water once during soaking is recommended for a milder flavor.
Step 2
Once the bitterness has been sufficiently removed, cut the coltsfoot into bite-sized pieces. To make them easier to eat, cut them into lengths of about 5-7 cm, as they can be a bit long otherwise.
Step 3
Gently squeeze out the excess water from the coltsfoot with your hands and place it in a bowl. Be careful not to squeeze too hard, as this can crush the leaves. Place the squeezed coltsfoot in a mixing bowl.
Step 4
Now it’s time to make the delicious seasoning. Start by adding 2 tablespoons of Doenjang. Doenjang adds a savory depth and nutty flavor to the salad.

Next, add 1 tablespoon of Gochujang for a hint of spicy sweetness and umami. You can adjust the ratio of Doenjang to Gochujang according to your preference.

Add 1 tablespoon of corn syrup or oligosaccharide for sweetness and a nice glaze. This also helps to balance out any remaining bitterness.

Incorporate 1 tablespoon of garlic powder to enhance the overall flavor. If you don’t have garlic powder, you can substitute it with 1/2 tablespoon of minced garlic.

Add 1 tablespoon of onion powder for a subtle sweetness and depth. This can be substituted with 1 tablespoon of finely minced fresh onion.

Finally, sprinkle in some sesame seeds to your liking for a nutty aroma. Lightly crushing the sesame seeds before adding them will release even more of their delightful fragrance.

Pour in 2 tablespoons of perilla oil. Gently loosen the coltsfoot to prevent clumping, and mix the ingredients evenly. Perilla oil will further enhance the unique aroma of the coltsfoot.
Step 11
