Rice Ingredients

  • 8 shiitake mushrooms (fresh or rehydrated dried shiitake)
  • 2 servings white rice (approx. 360ml)

Seasoning Sauce Ingredients

  • 1/4 green onion stalk (finely chopped)
  • 1 Korean green chili pepper (or 2 for spicier taste, seeds removed, finely minced)
  • 1 Tbsp red pepper flakes
  • Soy sauce (enough to lightly cover ingredients)
  • 1 Tbsp corn syrup or rice syrup
  • A generous pinch of toasted sesame seeds
  • 1 Tbsp sesame oil

Cooking Instructions

Prepare 8 shiitake mushrooms. Fresh shiitake mushrooms offer a more intense aroma. Remove the tough stems and thinly slice the mushroom caps into bite-sized pieces, about 0.5 cm thick. If using dried shiitake mushrooms, rehydrate them in lukewarm water until softened, squeeze out excess water, and then slice.

Rinse 2 servings of white rice. Place the rinsed rice in your rice cooker. Use slightly less water than you normally would for cooking rice, as the mushrooms will add some moisture. Spread the sliced shiitake mushrooms evenly over the top of the rinsed rice.

Let’s prepare the seasoning sauce. Finely chop 1/4 of a green onion stalk, using the white part for a better aroma.
