  • 1 tsp Salt (for blanching)

Step 1

Begin by trimming the rapini greens. Remove any wilted leaves or tough stems. Wash them thoroughly under running water to remove any dirt or debris. After washing, place them in a colander to drain excess water. While the greens are draining, start boiling a generous amount of water in a pot over high heat; this will allow you to proceed to the next step more quickly.

Step 2

Once the water is at a rolling boil, add 1 teaspoon of salt to season it. Add the prepared rapini greens to the boiling water and stir gently with chopsticks for about 5 seconds. Rapini cooks very quickly, so overcooking will make it mushy and diminish its crispness. Immediately remove the blanched greens and rinse them under cold running water to cool them down. This rinsing step helps prevent the residual heat from further cooking the greens, preserving their crunchy texture.

Step 3

After rinsing in cold water, gently gather the rapini greens with both hands and squeeze out as much water as possible.
