Cooking Instructions

Step 1

First, it’s crucial to remove the saltiness from the sea tangle. Lightly shake off any excess salt clinging to the sea tangle, then soak it in cold water for about 15-20 minutes. Taste the sea tangle intermittently to adjust the saltiness. If you rinse it too much and it becomes too bland, you’ll need to add more salt later. Aim for a slightly salty taste when rinsing.

Step 2

Gently squeeze out the water from the sea tangle with your hands. Be careful not to squeeze too hard, as this can cause the tangle to break apart. Squeeze it gently to remove excess moisture.

Step 3

Heat a moderate amount of cooking oil in a frying pan. Instead of pre-minced garlic, try chopping garlic cloves finely with a knife or slicing them. This method helps prevent the garlic from burning quickly and allows its aroma to infuse more beautifully into the dish. Sauté the garlic over medium-low heat until fragrant.

Step 4

Keep the heat on medium-low and quickly stir-fry the sea tangle. My mother-in-law often adds a generous amount of red pepper powder at this stage for a spicy kick. If you enjoy spicy food, try adding about 1/2 Tbsp of red pepper powder here. I’m not a fan of spicy food, so I omitted it.

Step 5

As you stir-fry the sea tangle, some liquid may release, and the tangle will soften and its color will deepen. Taste it at this point. If it’s not salty enough, add a tiny bit of salt or soy sauce to adjust the seasoning. If you’ve managed the saltiness well during the rinsing stage, you might not need any additional seasoning.

Step 6

Continue to stir-fry for about 5 more minutes, then turn off the heat. Finish by adding 1 tablespoon of perilla oil for a wonderful nutty aroma. Sprinkle with sesame seeds for added texture and flavor. Your delicious Stir-fried Sea Tangle is now ready!
