Cooking Instructions
Step 1
First, wash and peel the onion. Slice it thinly into long strips. This slicing method ensures it blends well with the water dropwort when mixed.

Thoroughly wash the prepared water dropwort under running water. Bring a pot of water to a boil with a pinch of salt. Briefly blanch the water dropwort for about 20-30 seconds. Be careful not to overcook, as it will become mushy. The key is to remove it when its vibrant green color is still intact.
Step 3
Immediately rinse the blanched water dropwort in cold water to stop the cooking and cool it down. This step enhances its crisp texture. Gently squeeze out excess water from the water dropwort using your hands. Avoid squeezing too hard, as this can release a grassy smell; a light squeeze is best.
Step 4
In a bowl, combine all the seasoning ingredients: 2 Tbsp soy sauce, 1 Tbsp red pepper flakes, 0.3 Tbsp sugar, 3 Tbsp vinegar, 0.3 Tbsp minced garlic, and 0.5 Tbsp toasted sesame seeds. Stir well until the sugar dissolves to create the seasoning sauce. Feel free to adjust the amount of soy sauce or vinegar according to your taste.

Add the drained water dropwort and the sliced onion to the prepared seasoning sauce.
