Main Ingredients- 90g fresh wild chives (dollae)
- Seasoning Ingredients
- 1 Tbsp soy sauce (jin-ganjang)
- 1/2 Tbsp anchovy sauce (myeolchi-aekjeot)
- 1 Tbsp plum extract (maesil-aek)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
Prepare one bunch of fresh wild chives (dollae), approximately 90g.
Step 2
The root part of the wild chives may have tough, fibrous outer skins. Carefully peel these off to ensure a tender bite. Take your time to clean each piece thoroughly.

Arrange the cleaned wild chives neatly after removing the root skins.
Step 4
Rinse the wild chives thoroughly under cold running water multiple times. Make sure to wash them carefully to remove any dirt or debris.

After washing, place the wild chives in a sieve to drain excess water. It’s crucial to remove as much water as possible, as excess moisture can dilute the seasoning and make the dish taste bland.

Chop the wild chives into bite-sized pieces. Avoid chopping them too finely, as this can diminish the texture. Aim for a rustic, enjoyable cut.

In a bowl, combine the chopped wild chives with all the seasoning ingredients: 1 Tbsp soy sauce, 1/2 Tbsp anchovy sauce, 1 Tbsp plum extract, 1 Tbsp gochugaru, 1 Tbsp sugar, 1 Tbsp vinegar, and 1 Tbsp sesame oil. Gently toss and mix the ingredients with your hands until well combined. Be careful not to overmix, as this can bruise the delicate chives.
