An exquisite Stollen made effortlessly with pre-made frozen dough, bursting with the refreshing zest of yuzu. This recipe offers a delightful contrast of crisp exterior and moist interior, harmonizing the bright citrus notes of yuzu with sweet cranberries and nutty almonds. Main Ingredients- 250g frozen pre-made dough
- 50g candied yuzu peel
- 30g dried cranberries
- 30g sliced almonds

Cooking Instructions
Step 1
Begin by thawing the frozen pre-made dough completely at room temperature. Once thawed, gently gather the dough into a single ball. Next, add the candied yuzu peel, dried cranberries, and sliced almonds onto the dough. Carefully knead the ingredients together until they are evenly incorporated throughout the dough, ensuring a well-mixed consistency.
Step 2
Divide the dough into two equal portions to make two Stollen loaves. Cover the dough portions with plastic wrap or a damp cloth and let them rest for a medium proof of about 15 minutes. After the medium proof, use a rolling pin to gently flatten each dough portion into an elongated oval shape. Aim for a moderate thickness; avoid rolling it too thin.
Step 3
Take another piece of dough (or the second half of the same piece) and fold it over the first piece, covering about two-thirds of it. This folding technique helps create the traditional Stollen shape. Place the shaped dough onto a baking sheet, cover it loosely with plastic wrap or a damp cloth, and allow it to undergo a second proof for approximately 40 minutes, or until it has visibly puffed up.
Step 4
Once the second proof is complete, preheat your oven to 180°C (350°F). Bake the Stollen for 20 to 25 minutes, or until it’s beautifully golden brown and cooked through. Remove the Stollen from the oven and let it cool completely on a wire rack. Just before serving, dust generously with powdered sugar using a fine-mesh sieve for a beautiful, snowy finish.
