Main Ingredients- 180g fresh spring cabbage (Bomdong)
- A small amount of radish
Seasoning- 2.5 Tbsp gochugaru (Korean red pepper flakes)
- 2 Tbsp anchovy sauce (fish sauce)
- 4 Tbsp pineapple juice
- 2 Tbsp plum extract (or plum syrup)
- 1 Tbsp minced garlic (finely sliced)
- 1 Tbsp toasted sesame seeds
- 2.5 Tbsp gochugaru (Korean red pepper flakes)
- 2 Tbsp anchovy sauce (fish sauce)
- 4 Tbsp pineapple juice
- 2 Tbsp plum extract (or plum syrup)
- 1 Tbsp minced garlic (finely sliced)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, trim any wilted or outer leaves from the spring cabbage. Wash it thoroughly under running water and drain well. Ensuring the cabbage is well-drained prevents the dressing from becoming watery. If the spring cabbage leaves are small, use them whole. For larger leaves, cut them in half for easier eating.
Step 2
Wash the radish clean under running water. You can peel it or leave the skin on, as you prefer. Julienne the radish thinly; this will add a pleasant crunch and texture when mixed with the cabbage.
Step 3
Rinse the fresh pineapple under running water. Remove the tough outer skin and the hard core. Cut the pineapple into manageable pieces suitable for blending. Place the pieces in a blender and process until you have smooth pineapple juice. This juice will add natural sweetness and a delightful tropical aroma to your dressing.
Step 4
In a large bowl, combine the prepared spring cabbage and julienned radish. Add all the seasoning ingredients: gochugaru, anchovy sauce, the prepared pineapple juice, plum extract, minced garlic, and toasted sesame seeds. Gently toss everything together, being careful not to mash the cabbage. Mix until all the ingredients are evenly coated with the delicious dressing.
