Cooking Instructions
Step 1
Prepare 190g of fresh gizzard shad sashimi. Using pre-sliced fish from the market can significantly speed up your preparation. If you’re not slicing it yourself, ensure you purchase from a trusted source for peace of mind.
Step 2
Let’s make the delicious dressing for the gizzard shad salad! In a bowl, combine 2 Tbsp gochugaru, 3 Tbsp gochujang, 1 Tbsp soy sauce, 4 Tbsp lemon juice, 2 Tbsp sugar, 1 Tbsp minced garlic, 1 Tbsp maesil cheong, 1 Tbsp oligodang, 1 Tbsp sesame oil, and 1 Tbsp vinegar. Whisk until smooth and well combined. Initially, I planned to rely solely on lemon juice for tanginess, but adding a bit of vinegar created a more balanced and pleasant flavor profile.
Step 3
Now, let’s prepare the vegetables for the salad. First, take a carrot from your refrigerator, wash it thoroughly, and then finely julienne it. The crisp texture of the carrot will add another dimension to the salad’s flavor.
Step 4
Chop the green onion, including both white and green parts, into bite-sized pieces. Add spiciness by finely chopping 2 Cheongyang peppers after removing the seeds. For a touch of color and mild sweetness, finely chop 1 red chili pepper (seeds removed). Feel free to adjust the number of Cheongyang peppers based on your spice preference.
Step 5
Wash the perilla leaves under running water and gently pat them dry. Then, roll them up like a sushi mat and chop them into large pieces. This method helps the dressing adhere better and makes them easier to eat.
Step 6
Prepare half a pear to add a sweet and refreshing taste. Peel and core the pear, then cut it into generous, chunky pieces. Set aside.
Step 7
It’s time to bring all the ingredients together! In a large bowl, gently combine the gizzard shad sashimi with the prepared dressing, ensuring the fish is evenly coated. (Be careful not to break the delicate fish.) Then, add the julienned carrots, chopped green onions, chili peppers, perilla leaves, water parsley, and pear. Toss everything lightly just before serving to maintain the crispness of the vegetables.
Step 8
The finished gizzard shad salad is a perfect harmony of tangy, sweet, and spicy flavors. The pear adds an extra layer of coolness, creating a truly delightful taste that stimulates the appetite.
Step 9
This delicious gizzard shad salad is fantastic when mixed with steamed rice. It’s an excellent dish to serve when entertaining guests, guaranteed to receive compliments, and also makes a wonderful accompaniment to alcoholic beverages.
