Main Ingredients
  • 400g peeled scallions (trimmed and ready to use)

Savory and Tangy Dressing
  • 1 Tbsp minced garlic (using freshly minced garlic will enhance the aroma)
  • 1/2 Tbsp soup soy sauce (adds a deep umami flavor)
  • 1 Tbsp regular soy sauce (for sweetness and seasoning)
  • 1/2 Tbsp anchovy sauce (for a refreshing umami boost)
  • 2 Tbsp plum syrup (adds a subtle sweetness and tanginess)
  • 2 Tbsp vinegar (helps keep the scallions crisp and adds brightness)
  • 2 Tbsp red pepper flakes (adjust to your spice preference)
  • A pinch of sesame oil (for a nutty aroma)
  • A pinch of toasted sesame seeds (for garnish and nutty flavor)

Cooking Instructions

Step 1

Prepare the cleaned, peeled scallions. Rinse them thoroughly under running water. Pat them dry gently, then cut them into bite-sized pieces, about 4cm long. Cutting them to a manageable length ensures they are easy to eat.

Step 2

Place the cut scallions into a large mixing bowl. Now, let’s make the delicious dressing. Add all the prepared dressing ingredients, except for the toasted sesame seeds, to the bowl with the scallions. This includes minced garlic, soup soy sauce, regular soy sauce, anchovy sauce, plum syrup, vinegar, and red pepper flakes.

Step 3

Gently toss the scallions with the dressing to combine. Be careful not to overmix or mash the scallions; use a light hand to gently fold and mix them. The goal is to coat the scallions evenly with the seasoning and slightly wilt them.

Step 4

Finally, sprinkle the toasted sesame seeds over the salad. This adds a wonderful nutty aroma and flavor, making the dish even more appealing.

Step 5

Transfer the well-mixed scallion salad to a serving dish. Your delicious scallion salad is now ready to be enjoyed! It’s best served immediately for a fresh and crisp texture, or you can let it sit for a few minutes for the flavors to meld slightly.
