  • 30g fresh baby greens (about 1 small pack)
  • 1 egg
  • Pinch of salt
  • Cooking oil, as needed

Seasoning Sauce

  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp double-strength vinegar
  • 1 Tbsp perilla oil
  • 1 Tbsp toasted sesame seeds (whole or crushed)
  • 1 Tbsp oligodang (corn syrup/oligosaccharide)
  • 1/2 Tbsp minced garlic

Cooking Instructions

Gently wash the baby greens and drain them thoroughly in a colander to remove excess water. (Approximately 30g is a single serving). Grind the sesame seeds to enhance their nutty aroma.

In a bowl, combine all the seasoning sauce ingredients: gochujang, double-strength vinegar, perilla oil, ground sesame seeds, oligodang, and minced garlic. Mix them well until a smooth, consistent sauce is formed.

Heat a frying pan with a generous amount of cooking oil. Lightly beat the egg with a pinch of salt. Pour the egg into the pan and immediately cover with a lid. This steaming technique helps the egg cook evenly on top, creating a visually appealing fried egg.

Lightly grease the inside of a rice bowl with perilla oil or sesame oil. This prevents the rice from sticking and makes it easier to unmold. Pack the warm rice firmly into the bowl, then invert it onto a larger serving plate, tapping gently to release the rice.
