Spring Delicacy: Seasoned Chamnamul Salad
Chamnamul, also known as Korean pimpinella, boasts a unique, aromatic flavor reminiscent of a blend between celery and chives. It’s a powerhouse of vitamins and minerals, particularly rich in beta-carotene, a precursor to Vitamin A. Main Ingredients- Chamnamul (Korean Pimpinella) 1 handful (approx. 100g)
Seasoning Ingredients- Sugar 1 Tbsp
- Plum Extract (Maesilcheong) 1 Tbsp
- Vinegar 2 Tbsp (Rice vinegar or apple cider vinegar recommended)
- Salt 1 tsp
- Red Pepper Flakes (Gochugaru) 1 Tbsp (adjust to taste)
- Sesame Oil 1 Tbsp
- Toasted Sesame Seeds, a pinch (for garnish)
- Sugar 1 Tbsp
- Plum Extract (Maesilcheong) 1 Tbsp
- Vinegar 2 Tbsp (Rice vinegar or apple cider vinegar recommended)

- Red Pepper Flakes (Gochugaru) 1 Tbsp (adjust to taste)

Cooking Instructions
Step 1
Gently rinse the fresh chamnamul multiple times under running water to remove any dirt or debris. Pay special attention to cleaning the root area, as it can retain soil.
Step 2
After washing, lightly shake off excess water from the chamnamul. Trim it into manageable lengths of about 4-5 cm. Cutting it too long can make it difficult to eat.
Step 3
In a bowl, combine 1 Tbsp sugar, 1 Tbsp plum extract, 2 Tbsp vinegar, 1 tsp salt, and 1 Tbsp red pepper flakes. Stir well to create the seasoning mixture, ensuring the sugar is dissolved.
Step 4
Place the prepared chamnamul in a mixing bowl. Pour the pre-made seasoning over the vegetables. Gently toss the chamnamul with your hands to ensure the seasoning is evenly distributed. Avoid vigorous mixing, as this can bruise the delicate leaves. Finish by drizzling in 1 Tbsp of sesame oil and sprinkling with toasted sesame seeds.
