Using Up Leftover Lettuce! Simple Sangchu Geotjeori
Got some leftover lettuce in the fridge? Don’t let it go to waste! Transform it into a vibrant and crisp Korean-style lettuce salad (Sangchu Geotjeori) for a delicious side dish. With just a few simple seasonings, you can quickly whip this up, and it’s guaranteed to be a hit with your meals, especially when you need a little something refreshing.
Main Ingredients- 1 bunch lettuce
Salad Dressing- 3 Tbsp soy sauce
- 2 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 3 Tbsp soy sauce
- 2 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Start by preparing your lettuce. If it’s not already washed, rinse it thoroughly under cold running water. Gently shake off excess water before proceeding. This ensures a clean and fresh base for your salad.
Step 2
Place the lettuce in a mixing bowl. Instead of using a knife, tear the lettuce into bite-sized pieces with your hands. This hand-tearing method helps preserve the lettuce’s fresh, crisp texture. Avoid tearing them too small, as they might become mushy.
Step 3
Now, add the prepared dressing ingredients (3 Tbsp soy sauce, 2 Tbsp red pepper flakes, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds) over the torn lettuce. Gently toss and mix the ingredients together. Be careful not to overmix or be too rough, as this can bruise the lettuce.
Step 4
It’s important to ensure the red pepper flakes are evenly distributed and coat the lettuce leaves uniformly. Evenly coating everything will result in a much more flavorful salad. Continue to gently mix until all the seasonings are well combined and clinging to the lettuce leaves!
