First, prepare all the necessary ingredients. Using fresh, high-quality ingredients is the foundation for delicious mayonnaise.

For best results, use a tall, narrow container for making mayonnaise, as it helps the ingredients emulsify more easily. Ensure the container is sterilized and completely dry. Carefully crack one fresh egg and remove the chalazae (the white, stringy bits attached to the yolk) with a chopstick or similar utensil. (Removing the chalazae helps eliminate any off-flavors and ensures a smooth texture.)

In the prepared container, add 1 Tbsp of commercial concentrated lemon juice, 1 Tbsp of vinegar, 1 Tbsp of sugar, 2 pinches of salt, and a little black pepper. Stir to combine. This step adds the basic sweet, sour, and salty flavor profile of mayonnaise.

Now, pour in 1 cup (approximately 200cc) of fresh vegetable oil. This ratio is key to creating homemade mayonnaise that tastes very similar to store-bought versions.

It’s crucial to use a very fresh egg; this ensures the yolk won’t break easily when the blender is inserted, leading to stable mayonnaise formation. Position the immersion blender at the very bottom of the container without moving it. Using the multi-purpose blade, blend at high speed (‘whirr~’) until the mixture starts to emulsify. Initially, do not move the blender up and down; keep it in one spot to ensure proper emulsification.

Amazingly, in less than 5 seconds, the mayonnaise will start to form rapidly! Once the mixture begins to thicken, slowly move the immersion blender up and down to incorporate all the ingredients and achieve a smooth, creamy texture. This will create a richer, thicker mayonnaise.
