Fresh Fruit and Nut Salad
Nutrient-Rich Fruit and Nut Salad: The Star is the Chopped Nuts!
Adding nuts to your salad is a fantastic way to incorporate healthy fats and proteins, which are often lacking in lighter salads. This salad combines the sweetness of fresh fruits with the delightful crunch of nuts, making it a satisfying and balanced meal.
Salad Ingredients
- 1/2 Apple
- 1/4 Pear
- 1 Persimmon (Fuyu or Hachiya)
- 50g Black Raspberry (or Blueberries)
- 1 handful Baby greens (or your preferred salad greens)
- 30g Nuts (walnuts, almonds, cashews, etc.), finely chopped
Yogurt Dressing
- 4 Tbsp Plain Yogurt
- 1-2 Tbsp Omija extract (or Plum extract/Strawberry syrup/Lemon syrup/Yuzu tea, to taste)
- Pinch of Salt
- 4 Tbsp Plain Yogurt
- 1-2 Tbsp Omija extract (or Plum extract/Strawberry syrup/Lemon syrup/Yuzu tea, to taste)
- Pinch of Salt
Cooking Instructions
Step 1
Begin by washing all the fruits intended for the salad. Core the apple and cut it into bite-sized cubes, about 1.5 cm. Dice the pear similarly. Remove the stem from the persimmon and cut it into cubes or thin slices. (You can leave the peel on Fuyu persimmons if you prefer.)
Step 2
Let’s make the delicious yogurt dressing! In a bowl, combine 4 tablespoons of plain yogurt. Add 1-2 tablespoons of omija extract (or your chosen alternative syrup/extract) for sweetness and flavor. Mix well, then add a tiny pinch of salt to balance the taste. Stir everything together until smooth. *Tip: Adjust the amount of syrup to your preferred level of sweetness.*
Step 3
Arrange the fresh baby greens attractively in your salad bowl. (If you don’t have baby greens, you can use other salad leaves like romaine or lettuce, or simply omit this step.) Artfully place the prepared fruit cubes over the greens. Drizzle the yogurt dressing evenly over the fruits and greens. Finally, sprinkle the finely chopped nuts over the salad one more time for added texture and nutty flavor. Your vibrant and nutritious Fruit and Nut Salad is ready! Enjoy.
