I whipped up this light salad for a satisfying meal. I was a little worried it might lack something without crisp lettuce, but to my surprise, it turned out incredibly delicious! The refreshing kiwi dressing perfectly complements the fruits.
Salad Ingredients- 2 Kiwis (Zespri Green Kiwis recommended)
- 1 Banana
- 1/2 cup Blueberries
- 1/2 cup Raspberries
- 1/4 head Cauliflower
Kiwi Dressing- 1 container (100g) Plain Yogurt
- 1 Kiwi
- 1 Tbsp Vinegar
- 3 Tbsp Lemon Juice
- 1 Tbsp Oligosaccharide (or honey/syrup)

Cooking Instructions
Step 1
First, let’s prepare the fruits and vegetables for the salad. Peel the kiwis, cut them into four wedges lengthwise, and then slice them into bite-sized pieces. Peel the banana and slice it diagonally. Cut the cauliflower into florets roughly the size of blueberries. Rinse the blueberries and raspberries.

Now, let’s make the delicious and refreshing kiwi dressing. In a blender, combine the plain yogurt, 1 peeled kiwi, vinegar, lemon juice, and oligosaccharide. Blend until smooth and creamy. This will create a wonderfully vibrant dressing.
