Recently, I had the wonderful opportunity to taste some premium Andong apples. Instead of just enjoying them as is, I decided to get creative and explore various ways to use them. One of the creations was these delightful canapés! They’re perfect for a fun activity with kids during school breaks or just a lovely way to spend time together in the kitchen. Children who love them can even snack on them as they help make them. For me, I sometimes whip these up for a light snack while enjoying a drink with my husband. The tartness of the apples adds a beautiful visual appeal and surprisingly pairs wonderfully with beverages, making them a fantastic and simple treat.

Ingredients

  • 1/2 Apple
  • 1/3 Onion
  • 1/2 Bell Pepper (choose your favorite color)
  • 1/2 Cucumber
  • 3-4 slices Cheddar Cheese
  • 2-3 packs Crackers
  • 4-5 Tbsp Mayonnaise

Cooking Instructions

To achieve a beautiful vibrant color, it’s best to use the apple with its peel on. Scrub the apple thoroughly with a fruit-specific cleanser or soap and water to ensure it’s perfectly clean.

Cut the cucumber into four long strips. Then, carefully slice away the soft, seedy core from each strip.

It’s important to remove as much of the core as possible. This helps maintain the crisp texture of the cucumber. Leaving excess moisture in can make the final mixture watery and less appealing.

Finely dice the remaining vegetables (onion and bell pepper) into small, bite-sized pieces. Remember to also finely dice the apple, keeping the peel on for that lovely color. You can use any color bell pepper you like; choosing different colors will make your canapés even more visually stunning.

In a bowl, combine the finely diced apple, onion, bell pepper, and cucumber. Add the mayonnaise and mix everything together thoroughly. Taste the mixture and adjust the amount of mayonnaise to your preference.

Cut each slice of cheddar cheese into four smaller pieces. These should be roughly the same size as your crackers. Arrange the cheese pieces diagonally on each cracker, slightly overlapping them.

Spoon a generous portion of the prepared apple mixture onto each cheese-covered cracker. For an extra touch of visual flair, sprinkle a little dried parsley on top. Your delicious and beautiful apple canapés are ready to serve!
