As spring arrives and a variety of fruits come into season, it’s the perfect time to make these fruit-packed summer rolls. Bursting with fresh flavors, they’re a light and healthy option, perfect for a mindful meal or a delightful snack. The vibrant colors make them as visually appealing as they are delicious.
Summer Roll Ingredients- Crisp Lettuce (e.g., Romaine or Iceberg)
- Thinly Sliced Onion
- Fresh Mint
- Blanched Asparagus Spears
- Julienned Cucumber
- Colorful Bell Peppers (red, yellow, etc.)
- Hard-Boiled Eggs, sliced
- Shredded Chicken Breast
- Enoki Mushrooms
- Sliced Kiwi
- Fresh Strawberries, sliced
- Sliced Apple
- Fresh Tomato slices
- Rice paper wrappers (for spring rolls)

Cooking Instructions
Step 1
Gather all your fresh vegetables. Wash them thoroughly and prepare them for slicing.

If you have any leftover fresh mint, chop it into manageable pieces. Thinly shred the lettuce to add a refreshing crunch.

Julienne most of the vegetables and fruits. For the eggs, hard-boil them until firm, then slice them thinly. Lightly blanch the asparagus spears in boiling water for about 30 seconds to retain their crispness.

Arrange all the prepared ingredients attractively on a platter or tray. This makes the rolling process much easier and visually appealing.

For a healthy boost or a satisfying meal, don’t forget the chicken breast! Poach or steam the chicken breast until cooked through, then shred it along the grain for tender, easy-to-eat pieces.

Prepare a bowl of warm water. Dip one rice paper wrapper into the water for about 15-20 seconds until it becomes pliable. Be careful not to oversoak, as it can tear easily.
