Cooking Instructions
Step 1
Prepare your fresh tomatoes. Start by making a shallow cross-shaped incision on the bottom of each tomato. This will make peeling much easier.
Step 2
Blanch the tomatoes in boiling water for about 30 seconds to 1 minute, just until the skins start to split. Immediately transfer them to an ice bath to cool, then carefully peel off the skins. You want to remove all the skin to achieve a smooth juice.
Step 3
Place the peeled tomatoes into a blender or use a hand blender. Blend until you achieve a smooth, pureed consistency with no chunks.
Step 4
Pour the tomato puree into a saucepan and simmer over medium-low heat for about 10 minutes. This process deepens the tomato flavor and creates a smoother texture. Add a tiny pinch of salt to enhance the taste, and optionally, stir in 1/2 teaspoon of olive oil for a richer flavor. (Olive oil is optional).
Step 5
Allow the cooked tomato juice to cool completely. Once chilled, pour it into an airtight container or bottle and store it in the refrigerator. To serve, add ice cubes and enjoy its fresh, tangy flavor. For a sweeter juice, dissolve some honey or sugar in it before drinking. Alternatively, enjoy it plain for the pure, zesty taste of tomatoes.
