Main Ingredients

  • 100g fresh Chamnamul (Korean pimpinella)
  • 1/2 onion

Dressing

  • 1 Tbsp sugar
  • 2 Tbsp anchovy sauce (myeolchi aekjeot)
  • 1 Tbsp minced garlic
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp oligosaccharide
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Thinly slice the 1/2 onion into julienne strips. Soak the sliced onions in cold water for about 10 minutes to remove any sharpness and make them crisper. Drain them thoroughly before use.

Rinse the 100g of chamnamul under cool running water until clean. Trim the stems and cut the greens into approximately 5cm lengths. Cutting them into bite-sized pieces will help the dressing adhere evenly and make them easier to eat.

In a large mixing bowl, combine the prepared chamnamul and the drained, sliced onions.

Now, let’s prepare the dressing. Add 1 Tbsp sugar, 2 Tbsp anchovy sauce, 1 Tbsp minced garlic, 3 Tbsp gochugaru, 1 Tbsp oligosaccharide, and 1 Tbsp sesame oil directly into the bowl with the vegetables. Sprinkle a pinch of toasted sesame seeds over the top. (You can mix the sesame seeds in now or sprinkle them as a garnish at the end.)

Gently toss all the ingredients together with your hands until the chamnamul and onions are evenly coated with the dressing. Be careful not to overmix or crush the delicate greens. Taste the salad and adjust seasoning if needed; you can add another tablespoon of anchovy sauce if you prefer it saltier.
