Begin by preparing 140g of fresh Norwegian mackerel fillet. Fresh mackerel is key for a clean taste and excellent texture.

Gently rinse the mackerel fillet under cold running water. After rinsing, thoroughly pat it dry with a clean kitchen towel or paper towels to remove all surface moisture. Excess moisture can lead to an unpleasant fishy odor.

Using a paper towel, carefully wipe the inside of the mackerel cavity to remove any remaining black membrane or impurities. These can be a source of fishiness.
