  • 200g early spring onions (buchu), enough for one meal

Seasoning

  • 2 Tbsp anchovy sauce (myeolchi aekjeot)
  • A little plum fermented extract (for sweetness and depth)
  • A little toasted sesame seeds (for nutty aroma)
  • 1 Tbsp red pepper flakes (gochugaru, adjust to taste)

Cooking Instructions

First, prepare the fresh early spring onions you’ve harvested. Trim them with kitchen scissors, remove any wilted outer leaves, and wash them gently under running water. After washing, let them drain thoroughly in a colander to ensure excess water is removed. This helps the dressing adhere well.

While you can cut the early spring onions into bite-sized pieces (about 2-3 inches), they are short enough to be left whole. Place the drained spring onions in a large bowl. Add the 2 Tbsp anchovy sauce, a little plum fermented extract, a sprinkle of toasted sesame seeds, and 1 Tbsp red pepper flakes.
