Ingredients- Fresh strawberries 490g
- Milk 1200g (use a good quality, fresh milk)
- Strawberries for garnish 12
- Sugar (25% of the strawberry weight)
- Honey or condensed milk 4 Tbsp (optional, for sweetness adjustment)
Cooking Instructions
Step 1
First, prepare 490g of fresh strawberries. Gently rinse them under running water. For a thorough clean, you can soak them in lightly salted water for about 5 minutes (use about 1/2 teaspoon of salt per cup of water).

After washing, drain the strawberries thoroughly in a colander. It’s important to remove excess water, as this can affect the shelf life of your strawberry syrup.

Place the drained strawberries in a bowl. Using a fork, gently mash them. Aim for a texture that still has some small chunks rather than a completely smooth puree; this adds a pleasant texture to the drink.

While mashing with the fork, break up any large clumps, but try to keep the strawberry pieces somewhat intact for a better mouthfeel. This is key to a nice texture.
