Salad Ingredients

  • 1 pack (approx. 100g) fresh purslane
  • 10-15 ripe strawberries
  • 8-10 plump shrimp
  • 1 Tbsp Chilsung Cider (or soju) (for shrimp deodorization)
  • 1/4 onion
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • Pinch of black pepper
  • Pinch of salt (to taste)

Gently wash the purslane under cold running water and carefully pat it dry. Ensuring excess water is removed will prevent the salad from becoming diluted. Hull the strawberries, wash them, and then slice them into 2-4 bite-sized pieces.

Lightly rinse the shrimp. If using shell-on shrimp, peel them. Sprinkle a pinch of black pepper onto the shrimp, then toss them with 1 Tbsp of Chilsung Cider (or soju) to eliminate any fishy odor. Heat a lightly oiled pan over medium heat. Add the shrimp and cook for 1-2 minutes per side until they turn pink and opaque. Be careful not to overcook, as this can make them tough.

Let’s prepare a zesty dressing! In a small bowl, whisk together 3 Tbsp of olive oil, 2 Tbsp of fresh lemon juice, a pinch of salt, and a pinch of black pepper until well combined. Finely mince 1/4 of an onion. Take half of the prepared dressing and mix it with the minced onion. Add the cooked shrimp to this onion-infused dressing and toss gently to coat. This step infuses the shrimp with a lovely oniony flavor.
