  • Fresh tomatoes, 4
  • Succulent shrimp meat, 100g
  • Sweet onion, 1/4
  • Mozzarella cheese (to taste)

Seasoning & Sauce
  • Olive oil, 3 Tbsp
  • Lime juice, 3 Tbsp
  • Sweet chili sauce, 2 Tbsp
  • Curry powder, 1 Tbsp
  • Oyster sauce, 2 Tbsp
  • Kelp soy sauce, 1 Tbsp

Cooking Instructions

Step 1

Fill a large pot with about 2/3 water and boil the spaghetti noodles. Cook for 7-8 minutes for a chewy texture, or 10 minutes for a soft texture. (Tip: A single serving of spaghetti is about the size of a US quarter.)

Step 2

Drain the well-cooked spaghetti noodles and arrange them attractively in a serving bowl.

Step 3

To prevent the noodles from sticking together, drizzle generously with olive oil and toss gently to coat. This ensures they mix smoothly later.

Step 4

Cut 2 of the fresh tomatoes in half. Lightly score the skin in a cross (+) pattern with a knife. This helps the flesh separate easily when cooked, allowing it to meld better with the sauce.

Step 5

Dice the remaining 2 tomatoes into bite-sized pieces and add them to a wok or deep pan. (Tip: Removing the seeds from the tomatoes can reduce excess moisture, resulting in a cleaner taste.)

Step 6

Add 3 Tbsp of lime juice and 2 Tbsp of sweet chili sauce to the wok. Cook the tomatoes over medium-high heat until they soften. They will break down, forming a natural sauce base.

Step 7

Once the tomatoes have softened somewhat, stir in 1 Tbsp of curry powder, ensuring it’s well combined without lumps. This will release a subtle curry aroma.

Step 8

Add the thawed and rinsed shrimp meat (drained of excess water) to the sauce in step 6 and cook together. The shrimp will add delicious umami to the sauce as it cooks.

Step 9

Add the onion, diced to a similar size as the tomatoes. You can also add another tomato if you like. Incorporating various vegetables will enhance the texture and flavor.

Step 10

Add 2 Tbsp of oyster sauce and 1 Tbsp of kelp soy sauce to season the dish. Adjust the amount of seasoning according to your preference.

Step 11

Place the prepared spaghetti noodles and mozzarella cheese over the sauce. Cook over medium heat for a short while until the cheese melts. Turn off the heat, drizzle with a little olive oil, and toss gently for a glossy and delicious pasta.
