Prepare 400g of fresh spring cabbage (Bomdong). Since soil can get trapped between the leaves, wash it thoroughly under running water multiple times. After washing, it’s crucial to drain the water well; this prevents the salad from becoming soggy and helps maintain its crisp texture. Pat it dry with paper towels or let it drain in a colander.
Step 2
Scallions (1/2 stalk) will add a refreshing taste and aroma to the salad. Slice them thinly. If they are cut too thick, the seasoning might not penetrate evenly, so thin slices are best.

Let’s make the delicious seasoning! In a bowl, combine 2 Tbsp gochugaru, 2 Tbsp guk-ganjang, 1 Tbsp eojang for umami, 1 Tbsp maesil-cheong for a touch of sweetness and tang, 0.5 Tbsp minced garlic for a hint of pungency, 1 Tbsp sesame oil for its nutty aroma, and finally, 1 Tbsp toasted sesame seeds for extra flavor.

Pour the prepared seasoning over the spring cabbage and sliced scallions. Gently toss everything together. Be careful not to over-mix, as this can bruise the cabbage and make it lose its crispness. The key is to coat the cabbage lightly.
