Cooking Instructions
Step 1
Start by preparing the chicken breast. Place 100g of chicken breast in boiling water and simmer for about 2 minutes. This poaching method keeps the chicken moist. Once cooked, let it cool slightly, then shred or cut it into bite-sized pieces.

Next, wash the romaine lettuce. Tear or chop the lettuce into pieces about 2-3 cm in size. In a large bowl, mix water with 2 Tbsp of vinegar to create a vinegar bath. Submerge the lettuce in this solution for 1-2 minutes to cleanse and refresh it. Rinse thoroughly under running water, then drain well in a colander. Ensure excess water is removed to prevent a diluted dressing.
Step 3
Prepare the baby greens or sprouts. Gently place them in the prepared vinegar water for about 1-2 minutes. Rinse them under cold water and carefully pat or shake off excess moisture. Be gentle with these delicate greens.
Step 4
Now, let’s make a special homemade dressing. In a small bowl, combine 1 Tbsp of mustard and 2 Tbsp of horseradish. Mix well. Add 2 Tbsp of lemon preserve for a touch of sweetness and tang. Finally, pour in 1/2 cup of pickled relish sauce and stir everything together until well combined. Adjust the quantity of lemon preserve or other ingredients based on the saltiness of your relish sauce.

Time to assemble the salad! Arrange the drained romaine lettuce as a base on your serving plate or in a salad bowl. Top with the prepared baby greens and sprouts. Finally, artfully place the shredded or sliced chicken breast on top of the greens.

Let’s also make some fresh orange juice. Peel 5 oranges and place them in a blender. Blend until smooth. Strain the blended orange pulp through a fine-mesh sieve or cheesecloth to extract the pure juice. This creates a vibrant and vitamin-rich fresh orange juice.
