Fusion Udon Stir-fry: A Tteokbokki Twist
Quick & Easy Udon Stir-fry Recipe (No Rice Cakes Needed!)
Don’t have tteokbokki rice cakes but craving that delicious, spicy-sweet flavor? No problem! This recipe uses chewy udon noodles as a fantastic substitute, creating a delightful fusion dish. It’s a perfect way to whip up a satisfying meal with ingredients you might already have on hand.
Main Ingredients- 2 portions Udon noodles
- 2 leaves Cabbage
- 2 sheets Fish cakes (eomuk)
Spicy-Sweet Sauce- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Oyster sauce
- 1 Tbsp Sugar
- 3 Tbsp Corn syrup (or Oligodang)
- 1 Tbsp Soy sauce (Korean seasoned soy sauce)
- 2 cups Water (approx. 400ml)
- 1 tsp Sesame oil
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Oyster sauce
- 1 Tbsp Sugar
- 3 Tbsp Corn syrup (or Oligodang)
- 1 Tbsp Soy sauce (Korean seasoned soy sauce)
- 2 cups Water (approx. 400ml)
- 1 tsp Sesame oil
Cooking Instructions
Step 1
Let’s start by preparing the vegetables. Cut the cabbage into thick strips, about 2-3 cm wide. Slice the fish cakes into bite-sized pieces. Cutting them generously adds a pleasant texture.
Step 2
Grab a wide, deep pan, like a wok or a deep skillet. Pour in 2 cups (approx. 400ml) of water and turn the heat to high. Once the water starts boiling, add all the sauce ingredients except for the sesame oil: gochujang, oyster sauce, sugar, corn syrup, and soy sauce. If you prefer a spicier dish, feel free to add 1/2 to 1 Tbsp of chili flakes (gochugaru). Once the sauce is well combined and boiling, add the sliced cabbage first.
Step 3
When the cabbage begins to soften and wilt, add the udon noodles and the sliced fish cakes to the pan. If the udon noodles are clumped together, use chopsticks or a spoon to gently separate them to ensure they cook evenly and don’t stick.
Step 4
As the udon noodles start to loosen up and cook in the hot sauce, it’s time for the star ingredient! Generously sprinkle a good amount of mozzarella cheese all over the pan. The cheesy goodness will elevate this dish to another level.
Step 5
Once the mozzarella cheese has melted beautifully and the sauce has thickened slightly to a desirable consistency, turn off the heat. Be careful not to overcook, as the noodles can become mushy and the sauce can dry out.

Want to make it even more special? If you have any leftover fried items like Gimmari (seaweed rolls) or vegetable tempura, consider crisping them up in an air fryer.
