Spicy, Savory, and Delicious Garlic Chive Ramen Recipe (Inspired by Chef Nam Sung-ryeol’s ‘Ma-neul Ttaeng-gi-myeon’)

Garlic and Chive Ramen

Among the many ramen recipes shared by chefs on TV, Chef Nam Sung-ryeol’s ‘Ma-neul Ttaeng-gi-myeon’ (Garlic Craving Noodles) from Olive Show particularly captured my heart! Koreans love garlic, and this ramen is a testament to that. It’s incredibly delicious, with the pungent kick of garlic perfectly balanced by the fresh aroma of chives. Prepare to be amazed by this unique and satisfying ramen experience!

Main Ingredients

  • 1 packet of instant ramen
  • 1 Tbsp minced garlic
  • A generous amount of fresh chives

Seasoning

  • 0.5 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions

Step 1

Lightly oil a pot and add the minced garlic, gochujang, and gochugaru. Stir-fry over low heat, mixing them together without burning. It’s important to gently sauté the garlic until fragrant, allowing the seasonings to meld.

Step 1

Step 2

Add the ramen soup base that comes with the packet and mix it thoroughly with the garlic, gochujang, and gochugaru mixture. Pre-stirring the seasonings like this deepens the ramen’s umami flavor significantly.

Step 2

Step 3

Pour in 500ml of water (or follow the amount specified on the ramen package) and bring it to a rolling boil over high heat. Once the broth is boiling, it’s ready for the noodles.

Step 3

Step 4

When the broth is bubbling vigorously, carefully add the ramen noodles. It’s best to gently place them in to prevent them from breaking.

Step 4

Step 5

To achieve a chewy texture, use chopsticks to lift and drop the noodles a few times while they cook. This process infuses air into the noodles, making them wonderfully springy. Cook for the duration recommended on the ramen package.

Step 5

Step 6

Once the ramen is cooked, turn off the heat and generously top with the chopped fresh chives. Enjoy the refreshing aroma of the chives with the hot broth. Feel free to add a whisked egg or other vegetables according to your preference.

Step 6

Step 7

(Optional) To truly live up to the name ‘Ma-neul Ttaeng-gi-myeon’ (Garlic Craving Noodles), if you desire an even more intense garlic flavor, add a little extra minced garlic towards the end of cooking. This will enhance the garlic’s aromatic profile, creating a truly special ramen.
