Garlic Scape and Pork Stir-Fried Noodles with Tofu Noodles
Chef’s Table Kim Jae-won Recipe – Healthy Garlic Scape Stir-Fried Noodles (feat. Tofu Noodles)
In today’s health-conscious era, many are interested in diet-friendly meals, and this trend is reflected in various television programs. Inspired by Chef Kim Jae-won’s recipe from ‘Chef’s Table,’ I tried making a stir-fried noodle dish using tofu noodles, garlic scapes, and pork. The combination of textures and flavors was unexpectedly delightful! The tofu noodles themselves were surprisingly nutty and delicious. This dish makes for a satisfying and wholesome meal, perfect for anyone looking for a healthy yet filling option.
Ingredients- 200g Ground Pork
- 2 packs Tofu Noodles
- 10 Garlic Scapes
- 1 bag Bean Sprouts
- 1 Red Chili Pepper
- 1 Green Chili Pepper
- 1 Korean Green Chili Pepper (optional, for extra spice)
- 1 Tbsp Minced Garlic
- 1 handful Green Onions (white parts preferred)
- 2 Tbsp Soy Sauce (regular)
- 2 Tbsp Oyster Sauce
- 1 Tbsp Cooking Wine (Mirin or similar)
- 1 Tbsp Sugar
- 1/2 cup Water
- Pinch of Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, wash the garlic scapes thoroughly, pat them dry, and chop them into bite-sized pieces, about 1 cm in length. Cutting them into appropriate sizes will ensure they cook evenly and efficiently.
Step 2
Finely mince the red chili pepper, green chili pepper, and Korean green chili pepper (if using), removing the seeds first. Mincing the chilies adds a beautiful color and enhances the overall flavor of the dish.
Step 3
In a bowl, combine the 200g of ground pork with 1 Tbsp of cooking wine, a pinch of salt, and a pinch of black pepper. Mix well with your hands; this marinating step is crucial for removing any gamey odor from the pork and seasoning it from within.
Step 4
Heat a lightly oiled pan over medium-low heat. Add the chopped green onions and stir-fry until fragrant and slightly softened, creating a delicious scallion oil. Then, add 1 Tbsp of minced garlic and sauté for another 30 seconds until aromatic. Increase the heat to medium-high and add the marinated pork. Break up any clumps and stir-fry until the pork is mostly cooked through and no longer pink.
Step 5
Once the pork is almost fully cooked, add 2 Tbsp of soy sauce and 2 Tbsp of oyster sauce to the pan. Continue to stir-fry for about 1 minute, allowing the sauces to coat the pork and deepen the flavors.
Step 6
Now, add the chopped garlic scapes to the pan. Stir-fry over high heat for 1-2 minutes. It’s important not to overcook the garlic scapes; you want them to remain slightly crisp and retain their vibrant green color and fresh aroma.
Step 7
Finally, add the washed and drained bean sprouts and the tofu noodles to the pan. Stir-fry everything together for just about 30 seconds, ensuring the sauces coat all the ingredients evenly. Tofu noodles are delicate, so be careful not to overcook them. Your delicious garlic scape and pork stir-fried noodles are now ready! Taste and adjust seasoning with additional salt and pepper if needed.
