Ingredients

  • Spaghetti pasta 220g
  • 3 stalks garlic scapes
  • 2 cloves garlic
  • 3 Cheongyang peppers (adjust to your spice preference)
  • 10 frozen shrimp, peeled and deveined
  • 3 Tbsp olive oil
  • 1 bag clams (approx. 200g)
  • 100ml water

  • Salt to taste
  • Pepper to taste

Cooking Instructions

Step 1

First, thinly slice 2 cloves of garlic to build a flavorful base. Wash the fresh garlic scapes thoroughly and cut them into 3cm lengths. Prepare the frozen shrimp by thawing them and patting them dry. Finely chop 3 Cheongyang peppers. If you prefer a spicier dish, feel free to add more Cheongyang peppers.

Soak the clams in lightly salted water for about 30 minutes to purge any grit. Place the cleaned clams and 100ml of water in a pot and bring to a simmer over medium heat. Do not discard the clam broth, as it will be used to enhance the sauce’s flavor.

Combine the clam broth and the chopped Cheongyang peppers in a blender. Blend until smooth. Please be cautious and allow the broth to cool slightly before blending if it is very hot, to prevent any risk of burns.

In a large pot of boiling water, add the 220g of spaghetti pasta. Cook the pasta until it is slightly underdone (‘al dente’), as it will continue to cook when tossed with the sauce. The pasta is perfectly cooked when you can still see a faint white core in the center when broken.

Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the sliced garlic and the cut garlic scapes, and sauté until fragrant and slightly tender. Once the garlic scapes begin to soften, add the shrimp and cook until they are about halfway done. Avoid overcooking the shrimp, as they can become tough.

When the shrimp are about halfway cooked, pour in the blended Cheongyang pepper and clam broth mixture. Add the cooked clams back into the pan. Toss in the cooked spaghetti and stir-fry quickly over high heat to allow the sauce to coat the pasta evenly. Finally, season with salt to your preference, add a pinch of freshly ground pepper, drizzle with 1 tablespoon of olive oil for aroma, and remove from heat. Serve your delicious pasta immediately!
