Main Ingredients

  • Pork (pork belly or neck) 300g
  • 1/4 Onion
  • 1/4 Scallion (Green Onion)
  • 1 tsp Butter
  • A little Parsley (for garnish)

Seasoning

  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Sugar
  • 0.5 Tbsp Soy sauce
  • 1 Tbsp Mirin (or cooking wine)
  • 0.5 Tbsp Minced garlic
  • 3 Tbsp Water

Cooking Instructions

If your pork is frozen, please thaw it beforehand. If it’s too cold, its cooking rate might be inconsistent. Cut the pork into bite-sized pieces (about 2-3 cm) and set aside.

Coarsely slice the onion and cut the scallion into diagonal pieces about 1 cm thick. Avoid cutting the vegetables too finely, as they can easily burn during cooking.

In a small bowl, combine all the seasoning ingredients (gochujang, sugar, soy sauce, mirin, minced garlic, and water). Mix them well until there are no lumps to create the sauce. Preparing the sauce in advance allows the flavors to better meld with the pork.

Melt 1 tsp of butter in a pan over low heat. Cooking over high heat can easily burn the vegetables and prevent them from developing their full flavor. Once the butter is melted, add the sliced onion and scallions. Sauté them over medium-low heat, stirring gently. Cook until the scallions start to turn slightly brown and you can smell the sweet aroma of the onions. Don’t overcook them at this stage, as they will cook further with the pork; just until their fragrance develops.

Add the thawed pork and a little parsley to the pan with the sautéed vegetables. Stir-fry together. Continue to cook until the surface of the pork starts to turn a light brown color. This step helps to seal in the juices of the meat.

Once the pork surfaces are nicely browned, pour the prepared seasoning sauce into the pan and stir-fry everything together. Ensure the sauce coats the pork and vegetables evenly. As the sauce begins to coat the ingredients beautifully, reduce the heat to low. Cook slowly, stirring occasionally to prevent the sauce from burning, until everything is thoroughly cooked and the sauce has thickened slightly. Once done, turn off the heat. Optionally, sprinkle with sesame seeds for garnish. Serve hot and enjoy with your favorite rice!
