  • Frozen chocolate muffin batter
  • 200g Cream cheese, softened to room temperature
  • 30g Powdered sugar
  • A little dark chocolate decorating pen

Cooking Instructions

Step 1

First, prepare the chocolate muffins. Instead of making batter from scratch, using a pre-made frozen chocolate muffin batter makes this recipe incredibly convenient. Transfer the frozen batter to the refrigerator the night before you plan to bake to allow it to thaw slowly. Once thawed, gently knead the batter until it’s smooth and well combined. Fill each muffin cup about 70% full, leaving room for them to rise during baking.

Step 2

Bake in a preheated oven at 180°C (350°F) for 20 to 25 minutes. To check if they are done, insert a skewer or toothpick into the center; it should come out clean. Once baked, remove the chocolate muffins from the oven and let them cool on a wire rack. It’s important to let them cool completely before decorating, as warm muffins can melt the frosting.

Step 3

Now, let’s make the ghost frosting! In a bowl, combine the 200g of softened cream cheese. Using a spatula, cream the cheese until smooth. Gradually add the 30g of powdered sugar and whip with a hand mixer until the mixture is light and fluffy. Whipping for about 3-5 minutes on medium-high speed will give it a wonderfully airy and cloud-like texture. Be careful not to overmix, as it can become too runny.

Step 4

Transfer the whipped cream cheese frosting into a piping bag fitted with a round tip. Using a piping bag allows for neat and consistent frosting shapes, giving your ghost muffins a professional look. If you don’t have a piping bag and tip, you can still frost them with a spoon or spatula.

Step 5

On top of the completely cooled chocolate muffins, pipe the cream cheese frosting to create adorable ghost shapes. You can pipe a rounded mound in the center, letting it drape down slightly, or create a more fluid, teardrop-like shape. Feel free to get creative with the size and style of your ghosts!

Step 6

Finally, it’s time to add the ghost’s eyes! A dark chocolate decorating pen is a quick and easy way to add features. You can draw the eyes directly onto the frosting, or for a cleaner look, pipe small circles or dots onto parchment paper, let them harden in the refrigerator, and then carefully place them onto the ghost frosting.
