Salad Ingredients

  • 100g fresh cabbage (washed and thinly shredded)
  • 1/8 sweet onion (sliced very thinly)
  • 45g carrot (thinly shredded)
  • About 1/2 piece fresh ginger (approximately thumb-sized, finely minced or shredded)

Dressing

  • 1 Tbsp grapeseed oil (or other salad oil, like olive oil)
  • 1 Tbsp vinegar (apple cider or white wine vinegar recommended)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp sugar (to balance the acidity)
  • A pinch of black pepper

Cooking Instructions

Step 1

First, we’ll mellow out the sharp bite of the onion. Slice the onion as thinly as possible. Then, soak the slices in cold water for about 10 minutes to remove some of their pungency, making them much more pleasant in the salad. After soaking, drain them thoroughly and set aside.

Step 2

Now, let’s prepare the main salad vegetables. Take your fresh cabbage, remove the core, and shred it thinly for a delightful crunch. Peel and thinly shred the carrot as well. For the ginger, you can either finely mince it using a grater or julienne it into very thin strips. If you prefer a milder ginger flavor, feel free to reduce the amount.

Step 2

Step 3

It’s time to make the delicious dressing! In a small bowl, combine the grapeseed oil (or your preferred salad oil), vinegar, salt, sugar, and black pepper. Whisk everything together with a fork or a small whisk until well combined and the sugar and salt are dissolved. Making the dressing in advance allows the flavors to meld beautifully.

Step 4

Finally, let’s bring all the ingredients together! Place the shredded cabbage, onion, carrot, and minced ginger into a large bowl. Drizzle the prepared dressing evenly over the vegetables. Gently toss everything together using tongs or chopsticks, being careful not to mash the ingredients. Ensure all the vegetables are lightly coated with the dressing. Your crisp and refreshing Ginger Cabbage Salad is ready to be served immediately!
