Ginseng-Infused Beef and Chive Rolls
Exquisite Beef and Chive Rolls Embracing the Essence of Ginseng
Recalling fond memories of enjoying beef and chive rolls with my family, I’ve created a unique recipe inspired by the inclusion of precious ginseng. This dish offers a sophisticated flavor profile and an appealing presentation, perfect for enriching family meals.
Main Ingredients- Thinly sliced beef (like beef brisket) 300g
- Fresh chives 100g
- Domestic ginseng 30g
- Black pepper to taste
- Baby leaf salad greens 20g
Sauce Seasoning- Garlic 6 cloves (minced or crushed)
- Water 200ml
- Sugar 1 tsp (teaspoon)
- Miso paste 1/2 Tbsp (tablespoon)

Cooking Instructions
Step 1
Begin by preparing all the ingredients for the dish. Wash fresh vegetables thoroughly and mince or crush the garlic.
Step 2
Rinse the ginseng under running water to remove any dirt. Slice it into strips approximately 5cm long, 0.3cm thick, and 0.3cm wide. Place the sliced ginseng in cool water for a short while to reduce any bitterness and maintain its freshness.
Step 3
On a clean cutting board or plate, arrange the thinly sliced beef (e.g., brisket). Overlap the slices slightly, layering 2 to 3 pieces to create a base. This ensures the rolls are full. Lightly season the beef with black pepper.
Step 4
Place the fresh chives evenly over the seasoned beef. Use an amount of chives that will result in a roll approximately 2cm in diameter when rolled. Too much chive might make rolling difficult.
Step 5
Now, it’s time to add the ginseng. Gently part the chives in the center and lay a strip of ginseng lengthwise. Placing the ginseng in the center ensures it is visible and appealing when the rolls are cut.
Step 6
Carefully roll the beef and chive mixture tightly from one end. Ensure there are no gaps and that the filling is securely enclosed. Rolling tightly will prevent the rolls from unraveling during cooking.
Step 7
Once rolled, cut the beef and chive rolls into manageable pieces, about 4 to 5cm in length. Use a sharp, clean knife for neat cuts.
Step 8
Heat a pan over medium heat and add a very small amount of oil. Place the cut rolls seam-side down onto the hot pan. Initially, use high heat to help the seam seal and prevent the rolls from coming apart.
Step 9
Once the bottom of the rolls are golden brown, reduce the heat to low. Cover the pan with a lid and let them cook gently for about 5 to 7 minutes, or until cooked through. Turn them occasionally to ensure even browning on all sides.
Step 10
Remove the cooked rolls from the pan and set them aside on a plate. Now, prepare the sauce. In the same pan used for cooking the beef, add the minced garlic and sauté over low heat until fragrant.
Step 11
As the garlic releases its aroma, increase the heat to high and let the pan get hot. Pour in the 200ml of water and use a spatula to scrape the bottom of the pan, incorporating any browned bits into the liquid as it comes to a simmer. This adds depth to the sauce.
Step 12
Once the water begins to boil, add the 1/2 Tbsp of miso paste and 1 tsp of sugar. Stir well to dissolve the miso, then let the sauce simmer over medium-low heat until it thickens slightly.
Step 13
When the sauce has reduced by about half, return the cooked beef and chive rolls to the pan. Toss them gently in the sauce for approximately 3 minutes to allow the flavors to meld. Garnish with baby leaf salad greens for a beautiful presentation. Your delicious Ginseng Beef and Chive Rolls are ready to serve!
