Gochu Japchae Ingredients
  • Pork loin 180g (julienned)
  • Green bell peppers (or similar mild peppers) 7 (julienned)
  • White part of green onion 6cm (julienned)
  • Garlic 2 cloves (minced or thinly sliced)
  • Oyster sauce 1 Tbsp
  • Soy sauce 1 tsp
  • Sugar 1 pinch
  • Cooking oil 2 Tbsp
  • Potato starch 1/2 Tbsp
  • Water 1 Tbsp
  • Flower buns (as desired)

Cooking Instructions

Step 1

First, prepare all your ingredients. Wash the green peppers, remove the seeds, and julienne them into thin strips. Thinly slice the white part of the green onion and mince or thinly slice the garlic. Julienne the pork loin to match the length of the peppers. Having everything prepped makes the cooking process much smoother.

Step 2

Heat a frying pan over medium heat and add 2 Tbsp of cooking oil. Add the julienned green onion and garlic, and stir-fry for about 1 minute until fragrant. You’ll notice a lovely aroma as the garlic begins to cook.

Step 3

Add the julienned pork to the pan and continue to stir-fry over medium heat for about 2 minutes, until the pork is mostly cooked through.

Step 4

Once the pork is partially cooked, carefully pour 1 tsp of soy sauce around the edges of the pan. This technique allows the soy sauce to caramelize slightly, infusing a delicious smoky flavor and enhancing the overall aroma.

Step 5

Now, add the julienned green peppers to the pan, along with 1 Tbsp of oyster sauce and 1 pinch of sugar. Increase the heat to medium-high and stir-fry quickly for about 2 minutes. You want the peppers to be slightly softened but still retain a pleasant crispness.

Step 6

Finally, it’s time to thicken the sauce. In a small bowl, whisk together 1/2 Tbsp of potato starch and 1 Tbsp of water to create a slurry. Pour this slurry into the pan and stir quickly until the sauce thickens and coats all the ingredients beautifully. Adjust the consistency by adding a little more starch slurry if needed.

Step 7

While the gochu japchae is finishing, steam the flower buns. Place them on a steamer basket over simmering water and steam over medium heat for about 7 minutes, or until they are warm and fluffy.

Step 8
