Easy Madeleine Recipe: Cafe-Style at Home!

No worries if you don’t have a traditional madeleine mold! You can use other baking molds to easily create delicious madeleines. (Using a madeleine mold will yield even prettier results!) Enjoy the golden-brown crust and the sweet flavor that fills your mouth.

Basic Ingredients
  • 2 large eggs
  • 80g granulated sugar
  • 100g cake flour
  • 1 pinch baking powder (approx. 1g)
  • 1 pinch salt (approx. 1g)
  • 80g canola oil (or melted butter)

Cooking Instructions

Step 1

First, crack 2 fresh eggs into a bowl and add all 80g of granulated sugar. Using a whisk or spatula, stir until the eggs and sugar are well combined. The mixture will become slightly thinner as the sugar dissolves.

Step 2

Now it’s time to add the dry ingredients. Sift the 100g of cake flour, 1 pinch of baking powder, and 1 pinch of salt directly into the egg and sugar mixture. Gently mix until just combined, ensuring there are no lumps of flour. Be careful not to overmix, as this can develop gluten and result in a tougher texture. Mix until you no longer see any dry flour.

Step 3

Add 80g of canola oil to the batter to add moisture and flavor, and mix again until evenly incorporated. If you prefer a richer buttery taste, you can substitute melted butter for canola oil. Continue mixing until the batter is smooth and consistent.

Step 4

Fill your chosen molds with the prepared batter, about 80% full. If you have a madeleine mold, it will create a more beautiful shape. Once the molds are filled, bake in a preheated oven at 180°C (350°F) for about 10 minutes. They are ready when the tops turn a golden brown. Baking time may vary depending on your oven, so adjust as needed. They are best enjoyed warm!
