Crispy Chive Pancakes and Refreshing Chive Salad Recipe Using Abundant Chives
After the rain, the chives are growing lush and green! If left for too long, they’ll flower and become tough, losing their flavor. This is the perfect time to harvest them and make delicious chive pancakes and a fresh chive salad. They make an excellent dish for entertaining guests, a simple snack with drinks, or a delightful accompaniment to rice or grilled meats. Organizing excess chives now means you can enjoy them later!
Chive Pancake Ingredients- 1 bunch Chives (approx. 300g)
- 1/4 cup Potato Starch
- 1 cup Pancake Mix or All-Purpose Flour
- 2 Eggs
- 1 cup Anchovy Broth or Water
Chive Salad Dressing Ingredients- 3 Tbsp Fish Sauce (Anchovy or Pollack)
- 2 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Vinegar
- 2 Tbsp Plum Extract
- 1/2 Tbsp Minced Garlic (optional)
- 1/2 Tbsp Sesame Oil (for finishing)
- Pinch of Toasted Sesame Seeds (for finishing)
- 3 Tbsp Fish Sauce (Anchovy or Pollack)
- 2 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Vinegar
- 2 Tbsp Plum Extract
- 1/2 Tbsp Minced Garlic (optional)
- 1/2 Tbsp Sesame Oil (for finishing)

Cooking Instructions
Step 1
Start by cleaning the chives. Gently shake off any soil clinging to the root ends. Trim off any yellow or dried tips from the leaves for a neat appearance.

Rinse the prepared chives thoroughly under running water, holding the root ends. You can also briefly immerse the leafy parts in water and swish them around for a more effective clean.

Cut the clean chives into bite-sized pieces, about 5-7 cm (2-3 inches) long. If you prefer, you can leave the pieces slightly longer for the salad.

Now, let’s prepare the pancake batter. In a large bowl, combine 1 cup of anchovy broth (or water) with 2 beaten eggs. Gradually whisk in 1/4 cup of potato starch and 1 cup of pancake mix (or flour) until a smooth batter forms. For extra flavor, you can add 2-3 chopped Cheongyang peppers or half a thinly sliced onion. Ensure the batter isn’t too thin.

Heat a frying pan over medium heat and add a generous amount of olive oil (or cooking oil). Pour the chive batter into the pan and cook until golden brown and crispy on both sides. It’s best to cook them until the edges are nicely browned and crisp.

Next, let’s make the fresh chive salad. Place the chopped chives in a bowl. Add the prepared dressing ingredients (fish sauce, soy sauce, gochugaru, vinegar, plum extract, minced garlic) and gently toss to combine. Be careful not to overmix, as this can make the chives mushy.

Taste the chive salad and adjust the seasoning as needed. Finally, drizzle with sesame oil and sprinkle with toasted sesame seeds to finish.
