Wash and peel the 4 fresh potatoes thoroughly. Grate the potatoes finely using a grater or blend them smoothly using a blender. Today, we’re using a blender! Don’t remove the moisture released from the potatoes; use it as is to enhance the chewy texture unique to potatoes.

Wash the fragrant chives, pat them dry, and finely chop them. Place the chopped chives in a bowl.

Add 1 fresh egg and 1 tablespoon of potato starch to the bowl with the chives. Adding potato starch helps the batter become chewier and crispier when cooked.

Mix all ingredients thoroughly with a spatula or chopsticks until well combined. Finally, add a pinch of salt to enhance the savory flavor, and your delicious potato pancake batter is ready! Ensure the batter consistency is neither too runny nor too thick.
