  • 0.5 Tbsp vinegar

First, let’s prepare the vegetables that will add texture and flavor to our potato pancakes. Finely julienne half of one potato. Then, julienne the onion, zucchini, and carrot to match the thickness of the potato strips. Finely chop the green onion for the dipping sauce.

Now, for the star ingredient! We’ll be using 3.5 of the 4 potatoes. Grate these potatoes until they are finely minced, using a food processor or a grater. If using a blender, be careful not to add too much water. A slightly coarse texture will result in a chewier pancake.

Combine the grated potatoes with all the julienned vegetables (onion, zucchini, and carrot) and mix well. Adding plenty of vegetables not only makes the pancakes visually appealing but also boosts their nutritional value.
