Introducing a special recipe that elevates the humble potato stir-fry with the addition of curry powder, enhancing its savory notes and overall flavor. First, prepare all the vegetable ingredients. Wash the potatoes and carrots thoroughly, peel them completely, and also peel the onion.

Slice the onion thinly into strips about 0.3cm thick. Slicing them too thickly might affect the texture, so aim for uniform slices.

Cut the potatoes into strips no thicker than 0.5cm. If they are too thick, they will take a long time to cook; if too thin, they might break apart, so aim for a moderate thickness. After slicing, rinse the potatoes lightly under running water to remove excess starch. This step helps prevent them from sticking together and results in a cleaner texture when stir-fried.

Similarly, slice the carrot into strips about 0.3cm thick, similar to the onion. Cutting the potatoes and carrots to a similar thickness ensures they cook evenly together.

Heat a pan over medium heat, add cooking oil, and then add one soju cup of water (approximately 50ml). Adding a little water like this while stir-frying helps cook the potatoes gently without burning.
