  • 2 bowls of cooked rice (warm rice works best)
  • 3 eggs
  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 3 Tbsp chopped green onions
  • 3 Tbsp cooking oil

Cooking Instructions

First, prepare your optional ingredients according to your preference. Dice any vegetables like carrots, onions, or bell peppers into small, bite-sized pieces. If using sausage or ham, chop them finely as well. Prepare shrimp if desired.

In a large bowl, combine the warm cooked rice with the 3 eggs. Mix them thoroughly. Coating each grain of rice with egg will help prevent clumping and ensure a fluffy texture when fried. Using chopsticks to break up the rice and mix with the egg can be helpful.

Add the 2 Tbsp of soy sauce and 1 Tbsp of oyster sauce to the egg-coated rice. Now, add all the diced optional ingredients (vegetables, sausage, shrimp) that you prepared in step 1. Mix everything well. Pre-mixing the ingredients with the sauces ensures even seasoning and makes the stir-frying process much smoother.

Heat the 3 Tbsp of cooking oil in a frying pan or wok over medium-low heat. Add the chopped green onions and stir-fry gently until fragrant, creating scallion-infused oil. This step adds a wonderful depth of flavor to the fried rice. If you’re not a fan of green onions or are short on time, you can skip this step. You can either remove the cooked scallions or push them to the side of the pan.
