Main Ingredients
  • 1 packet of store-bought curry powder (choose your preferred spice level)
  • 2 medium potatoes
  • 1/2 carrot
  • 1 medium onion
  • 200g pork loin or tenderloin
  • 1 Tbsp cooking sake (or mirin)
  • Pinch of black pepper
  • 700ml water

  • 1 Tbsp butter

Cooking Instructions

Step 1

First, prepare your vegetables. Peel the potatoes, carrot, and onion. Dice them into bite-sized pieces (about 2cm cubes) so they cook evenly. Cut the pork into similar sized pieces as well.

Step 2

Heat a non-stick pan over medium heat with a little cooking oil. Add the diced onion and sauté until translucent. Then, add the potatoes and carrots and stir-fry for about 3-5 minutes until they are lightly coated with oil and start to soften slightly. This helps them cook more evenly later.

Step 3

Once the vegetables are partially cooked, add the pork to the pan. Cook until the pork is no longer pink. Pour in the cooking sake to remove any gamey smell, and season with a pinch of black pepper. If you’re using butter, add it now and let it melt into the mixture, stirring to incorporate. This adds a wonderful richness.

Step 4

After stir-frying all the ingredients together, pour in 700ml of water. Bring the mixture to a boil, then reduce the heat to medium-low. Gradually stir in the curry powder, ensuring it dissolves completely without lumps. Let it simmer, stirring occasionally, for about 5-10 minutes until the curry thickens to your desired consistency. Serve hot over rice for a delicious curry rice bowl!
