Golden Kidney Bean Rice with Clear Beef Bone Broth, Pan-Seared Fish, and Grilled Vegetables

As the saying goes, ‘Food is medicine.’ In this era of longevity, my wish is for everyone to eat well and stay healthy, so I’ve whipped up a delicious meal with love. Let’s set a bountiful table with dishes that are as delightful to look at as they are to eat.
Nostalgic Kidney Bean Rice- 2 servings of short-grain rice
- 1 handful of fresh kidney beans (shelled)
Hearty Beef Bone Broth- 1 pack of pre-made beef bone broth
- 70g of daikon radish, cut into large pieces
- 1/2 stalk of green onion, washed clean
- A pinch of Korean sea salt
Colorful Grilled Vegetables- 1/2 zucchini
- 1/2 carrot
- 1 ripe tomato
- 1/2 eggplant
- Korean sea salt
- Freshly ground black pepper
- Extra virgin olive oil
- A sprinkle of toasted sesame seeds
Special Pan-Seared Fish- 1 fresh fish of your choice
- A little cooking oil
- 1 pack of pre-made beef bone broth
- 70g of daikon radish, cut into large pieces
- 1/2 stalk of green onion, washed clean

Cooking Instructions
Step 1
Shell the fresh kidney beans, preferably harvested recently. If using frozen beans, thaw them first.
Step 2
Place the washed rice and prepared kidney beans into your rice cooker. Add the appropriate amount of water as you normally would for cooking rice.

Cook the kidney bean rice using your rice cooker’s setting. Perfectly cooked, fluffy rice will be a wonderful start to your meal.

Pour the beef bone broth pack into a pot and bring it to a rolling boil over high heat. Preparing other ingredients while the broth boils will save you time.
