Ingredients

  • 300g Rolled Oats
  • 225g Unsalted Butter
  • 225g Light Brown Sugar
  • 75g Golden Syrup (or corn syrup/agave nectar if unavailable)
  • 100g Mixed Dried Fruit (e.g., raisins, cranberries, chopped apricots)
  • 30g Mixed Nuts (e.g., walnuts, almonds, pecans, roughly chopped)
  • 50g Milk Chocolate (optional, for drizzling)

Cooking Instructions

Step 1

In a saucepan, combine the unsalted butter (225g), light brown sugar (225g), and golden syrup (75g). Place over low heat and stir gently until all ingredients are completely melted and well combined into a smooth, syrupy mixture. Be patient and ensure the sugar dissolves fully without burning. While the syrup is melting, preheat your oven to 160°C (320°F).

Step 1

Step 2

Add the rolled oats (300g), mixed dried fruit (100g), and mixed nuts (30g) to the melted syrup mixture. Stir thoroughly with a spatula until all the dry ingredients are evenly coated with the buttery syrup. If your dried fruits or nuts are in large pieces, it’s best to chop them into bite-sized pieces (about 1-2cm) before adding them for a better eating experience. Ensure everything is well combined for consistent flavor and texture.

Step 2

Step 3

Prepare a square baking tin, approximately 20cm x 20cm (8×8 inches). Lightly grease the tin with butter or line it with parchment paper, ensuring the paper overhangs the sides slightly to make removal easier. Spoon the oat mixture into the prepared tin and press it down evenly with the back of a spoon or spatula. Bake in the preheated oven at 160°C (320°F) for 30-35 minutes, or until the edges are golden brown and slightly crisp. The center should still be a little soft.

Step 3

Step 4

Carefully remove the baking tin from the oven using oven mitts. Allow the flapjacks to cool in the tin for at least 30 minutes. This cooling period is crucial for the flapjacks to firm up and set properly, making them easier to cut without crumbling.

Step 4

Step 5

Once partially cooled and firm enough to handle, carefully lift the flapjack slab out of the tin using the parchment paper overhang. Place it on a cutting board and cut into your desired portions (e.g., squares or rectangles). For an optional decadent touch, melt the milk chocolate (50g) and drizzle it over half of the flapjack slab, or dip the edges. Let the chocolate set completely before serving. These delicious flapjacks can be stored in an airtight container at room temperature for several days.
