  • 1 Tbsp Peanut Butter/Sauce (For a creamy, nutty taste)
  • 50ml Water (Helps ingredients and sauce meld together)

Cooking Instructions

Step 1

First, prepare the rice noodles. Take 100g of dried rice noodles and soak them in lukewarm water for approximately 1 hour until they become soft and pliable. Be careful not to oversoak, as the noodles can become mushy.

Step 1

Step 2

Next, prepare the vegetables. Thinly slice the white parts of the green onion and cut the green parts diagonally. Slice the onion and cabbage thinly. Cut the garlic chives into about 3cm lengths. Rinse the bean sprouts under running water and shake off excess moisture.

Step 2

Step 3

Now, let’s make the special Pad Thai sauce, which is key to the dish’s flavor. In a bowl, combine 1 Tbsp oyster sauce, 1 Tbsp fish sauce, 1 Tbsp sugar, 1 Tbsp peanut butter/sauce, and 50ml water. Stir until the sugar is dissolved. Making the sauce ahead of time will save you time during cooking.

Step 3

Step 4

It’s time to start stir-frying! Heat a generous amount of cooking oil in a wok or large skillet over medium heat. Add the minced garlic and the sliced white parts of the green onion, and stir-fry until fragrant, creating an aromatic garlic oil.

Step 4

Step 5

Add the prepared shrimp and dried shrimp to the pan. Stir-fry until the shrimp turn pink and the dried shrimp release their flavor. Soaking the dried shrimp beforehand will make them softer.

Step 5

Step 6

Once the shrimp are partially cooked, add the sliced onion and cabbage. Stir-fry them with the other ingredients until the vegetables are slightly tender but still retain a pleasant crispness. This is crucial for texture.

Step 6

Step 7

Push the ingredients to one side of the pan to create space. Pour the beaten egg into the empty space and scramble it. Once the egg is lightly cooked, gently mix it with the other ingredients in the pan.

Step 7

Step 8

Add the soaked rice noodles to the pan. Using your spatula, gently loosen and stir-fry the noodles in the heat of the pan until they are tender. Be sure to stir frequently to prevent them from sticking to the bottom.

Step 8

Step 9

Now, pour the prepared Pad Thai sauce over the noodles and ingredients. It’s best to add about half of the sauce initially and stir-fry to coat everything evenly. Taste the noodles and add more sauce as needed to achieve your desired level of seasoning.

Step 9

Step 10

Once the noodles and sauce are well combined, add the bean sprouts. Stir-fry quickly for just a short time until the sprouts are slightly wilted but still crunchy. Overcooking the bean sprouts will release water and diminish their crispness.

Step 10

Step 11

Finally, add the cut garlic chives and stir-fry very quickly for about 30 seconds over high heat. This adds a fresh aroma and vibrant color to the dish. Avoid overcooking to maintain their texture and bright green color.

Step 11

Step 12

Your delicious Pad Thai is now ready! Transfer it to a serving plate and sprinkle generously with chopped peanuts for added crunch and flavor. For a touch of bright acidity, you can serve with a wedge of fresh lemon to squeeze over the top.
