Main Ingredients

  • 1/2 chicken (cleaned)
  • 2 potatoes (medium-sized)
  • 1 carrot (medium-sized)
  • 1 onion (medium-sized)
  • 1/2 stalk green onion
  • 3 Korean chili peppers (cheongyang peppers)
  • A handful of perilla leaves (optional)

Golden Seasoning Sauce

  • 1/2 cup soy sauce (100ml)
  • 3 Tbsp gochujang (Korean chili paste)
  • 1/2 cup gochugaru (Korean chili flakes, 50g)
  • 1/2 cup soju (100ml)
  • 2 Tbsp minced garlic
  • 3 Tbsp sugar (adjust to taste)
  • Pinch of black pepper
  • 1 Tbsp perilla oil
  • 1 Tbsp salt (for seasoning adjustment)

Cooking Instructions

Rinse the cleaned chicken under cold water. Place the chicken in a pot, add enough water to cover, and bring to a boil over high heat. Once boiling, continue to boil for 2-3 minutes. Discard the water to remove impurities and any gamey smell. Rinse the chicken thoroughly and drain well. This step helps make the chicken tender and clean.

While the chicken is blanching, prepare the vegetables. Peel the potatoes and carrots and cut them into bite-sized pieces, about 1.5 cm thick (cubed or half-moon shapes). Coarsely chop the onion, and slice the green onion diagonally. Mince the Korean chili peppers. Wash the perilla leaves, roll them up, and slice them coarsely. (Perilla leaves are added at the end for fragrance.)

Let’s make the key to delicious Dakbokkeumtang: the seasoning sauce! In a bowl, combine soy sauce, gochujang, gochugaru, soju, minced garlic, sugar, black pepper, perilla oil, and salt. Mix well until thoroughly combined. You can adjust the amount of sugar according to your preference.

Place the drained chicken in the pot and pour all the prepared seasoning sauce over it. Add the potatoes and carrots as well. Gently mix everything together so the sauce coats the chicken and vegetables evenly. Let it marinate for about 10 minutes. This allows the flavors to meld and penetrate the ingredients.

Add 2 cups (400ml) of water to the pot, cover with a lid, and simmer over medium heat for about 30 minutes. Cook until the chicken is tender and the sauce has reduced. Stir occasionally to prevent the chicken from sticking to the bottom of the pot.
