Ingredients
  • 1 bowl cooked rice
  • 2 eggs
  • 1/2 stalk green onion
  • 1/5 carrot (optional, skip if unavailable)
  • 1 shiitake mushroom (optional, skip if unavailable)

Cooking Instructions

Step 1

First, prepare the vegetables that will add flavor to your fried rice. Finely chop the green onion. Wash and finely dice the carrot and shiitake mushroom. If using shiitake mushrooms, removing the tough stems and using only the caps will result in a more tender texture.

Step 2

Heat a pan with a generous amount of cooking oil over low heat. Add the chopped green onions and stir-fry them slowly until fragrant to create ‘scallion oil.’ This process infuses the entire fried rice with a deep, aromatic flavor.

Step 3

Once the scallion oil is ready, crack the 2 fresh eggs into a separate bowl and whisk them well. Pour the beaten eggs into the pan and scramble them using chopsticks or a spatula until they form soft curds. It’s best to remove them when they are slightly undercooked, as they will finish cooking with the rice and remain very tender.

Step 4

Now it’s time to stir-fry the rice, the foundation of fried rice. Add the warm cooked rice (about 1 bowl) to the pan with the remaining scallion oil. Use a spatula to break up any clumps of rice and stir-fry until the grains are separated and slightly toasted. Ensuring the rice is fluffy and not sticky is key.

Step 5

Once the rice is partially stir-fried, add 1/2 tsp soy sauce and 1/2 tsp salt to enhance the aroma and taste. If you only have one of these ingredients, you can use 1 full teaspoon of whichever you have to season the rice. Stir-fry evenly to ensure the seasoning coats every grain of rice.

Step 6

Next, add the prepared diced carrots and shiitake mushrooms to the pan and continue to stir-fry. Cook just until the vegetables are slightly tender. If the mixture seems too dry, add a little more cooking oil. If you don’t have carrots or shiitake mushrooms, feel free to skip this step.

Step 7

Finally, add 1 tsp of oyster sauce for an extra layer of umami. If you don’t have oyster sauce, you can omit it; the dish will still be delicious. After everything is well combined, taste the fried rice before turning off the heat. If it needs more saltiness, add a tiny pinch of salt. A well-seasoned dish is always the most enjoyable!
